運行原理
從脫氣開始
在加熱油之前，必須在真空下除去空氣（除氣）以通過防止氧化來保護產品的質量。 離開脫氣機后，油在特殊的換熱器（即節熱器）中通過離開除臭塔的熱油進行再生加熱。 這將確保從熱油中回收盡可能多的熱量。 油隨后進入最終加熱器，在該加熱器中，通常使用高壓蒸汽將油正好加熱到除臭所需的溫度。
汽提和保留
當油達到指定溫度時，將其輸入除臭塔，這是用于對食用油脂進行除臭的主要組件。 這樣的除臭塔可以由汽提段和保留段組成。 當油通過汽提段時，它會受到真空和蒸汽的共同作用，由此除去比油本身的蒸氣壓更高的揮發物，包括游離脂肪酸 (FFA)。 如果存在這些揮發性雜質，食用油的風味、氣味和穩定性會受到影響。
油隨后在保留段中保留一定的時間以進行熱處理（稱為熱漂白），目的是處理不良色素并確保最終產品的穩定性。 油在保留段中保留的時間長短在很大程度上取決于所需的產品規格。
冷凝除去的雜質
已從油中除去的揮發性雜質通過再循環和冷卻的餾出物在所謂的洗滌塔單元中冷凝。 洗滌塔可以放在汽提段的頂部，也可以作為單獨的容器建造。
冷卻
最后，油分兩個階段冷卻。 首先在節熱器中，然后達到指定的最終溫度。 由隨后經過拋光過濾，再輸送到后續工藝（儲存或包裝)。
